Description
A cozy autumn treat blending the sweet tartness of apples with rich salted caramel. These tender scones are studded with apple pieces and drizzled with a glossy salted caramel glaze, perfect for breakfast or tea time.
Ingredients
2 cups all-purpose flour
3/4 cup (1 1/2 sticks) cold butter, cubed
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 1/2 cups peeled and diced apple (Granny Smith preferred)
3/4 cup heavy cream
1/2 cup light brown sugar
1/2 cup unsalted butter
1 tablespoon powdered sugar
1/2 teaspoon sea salt
Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
Add cold butter cubes and use a pastry cutter to blend until the mixture resembles coarse crumbs.
Fold in diced apples until incorporated.
Turn dough onto a lightly floured surface. Pat into a 1-inch thick round. Cut into 8 wedges with a knife.
Place scones on the prepared baking sheet and bake for 20 minutes.
Meanwhile, make the caramel: In a small saucepan, combine cream, brown sugar, and powdered sugar. Cook over medium heat until the sugar dissolves, about 3 minutes. Remove from heat and stir in melted butter. Allow to cool slightly, then stir in sea salt.
When scones are done, let them cool for 5 minutes. Drizzle with caramel sauce and serve warm.
Notes
For extra flavor, add a handful of chopped pecans or walnuts to the dough.
Store in an airtight container at room temperature for up to 3 days. Caramel sauce can be refrigerated and reheated gently.
For non-dairy options, substitute heavy cream with full-fat coconut milk.
