1 ¾ cups cinnamon graham cracker crumbs
3 tablespoons granulated sugar
5 tablespoons unsalted butter, melted
32 ounces cream cheese, at room temperature
1 cup granulated sugar
½ cup sour cream
4 large eggs, at room temperature
1 ½ teaspoons ground cinnamon
1 teaspoon vanilla extract
2 tablespoons granulated sugar mixed with 1 teaspoon cinnamon for topping


Instructions

Preheat your oven to 325°F (163°C).
In a bowl, combine graham cracker crumbs, 3 tablespoons sugar, and melted butter; press into the bottom of a 9-inch springform pan.
Bake the crust for 10 minutes, then set aside to cool.
In a large bowl, beat the cream cheese and 1 cup of sugar until completely smooth.
Mix in the sour cream, cinnamon, and vanilla extract until well combined.
Add the eggs one at a time, mixing on low speed just until incorporated; do not overmix.
Pour the batter over the prepared crust.
Bake for 55 to 65 minutes, or until the edges are set but the center still has a slight jiggle.
Turn off the oven and leave the cheesecake inside with the door cracked for 1 hour.
Remove, cool to room temperature, then chill in the refrigerator for at least 6 hours.
Sprinkle with the cinnamon-sugar mixture before serving.
