Description

Experience the nostalgic warmth of autumn in a bite-sized treat. These soft, pillowy cookies feature a tender cinnamon-scented dough filled with a rich, chunky apple pie spiced center. Perfect for those who crave the complex, comforting flavors of a traditional apple pie without the hassle of pastry crusts. These cookies are easy to make, shareable, and serve as a heartfelt, homemade indulgence for family gatherings or quiet afternoon pick-me-ups.

Ingredients

Scale

1 cup unsalted butter, softened
1/2 cup brown sugar
1 cup granulated sugar
1/2 teaspoon kosher salt
2 large eggs, room temperature
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/3 teaspoon baking soda
1/4 teaspoon baking powder
3 cups all-purpose flour
2 apples, peeled, cored, and finely diced
1 tablespoon lemon juice
1/2 teaspoon cinnamon (for apple filling)

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, toss the diced apples with lemon juice and 1/2 teaspoon cinnamon; set aside.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
Whisk together the flour, salt, baking cinnamon, baking soda, and baking powder in a separate bowl.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Scoop dough into 1.5-tablespoon portions and roll into balls, placing them onto the prepared baking sheet.
Use your thumb or the back of a spoon to create a small indentation in the center of each cookie.
Place a teaspoon of the apple mixture into the center of each indentation.
Bake for 12-15 minutes or until the edges are lightly golden and the centers are set.
Allow to cool on the pan for 5 minutes before transferring to a wire rack.

Notes

Store the cookies in an airtight container at room temperature for up to 3 days. For a firmer cookie, chill the dough balls for 30 minutes before baking to prevent excess spreading. You can substitute Granny Smith apples for a tart contrast.
