Description
A charming, simplified version of the timeless apple crisp, perfectly scaled for two. Instead of using the oven, fresh apples are tenderly caramelized with cinnamon and brown sugar in a skillet, then topped with a crunchy blend of toasted oats and almonds. It is a warm, comforting, and quick dessert that honors tradition while embracing modern efficiency, making it the perfect sweet conclusion to an intimate evening.
Ingredients
For the Topping:
2 tablespoons butter
2 tablespoons brown sugar
1 1/2 tablespoons pure maple syrup
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
A pinch of fine sea salt
3/4 cup gluten-free old fashioned oats
1/4 cup sliced almonds
For the Apples:
2 tablespoons butter
1 tablespoon brown sugar
1/2 teaspoon ground cinnamon
2 medium Granny Smith apples, peeled and chopped
Instructions
In a small skillet over medium heat, melt 2 tablespoons of butter for the topping.
Stir in the brown sugar, maple syrup, vanilla, cinnamon, and salt.
Add the oats and sliced almonds, stirring frequently for 3-5 minutes until golden and toasted, then remove from the skillet and set aside.
In the same skillet, melt the remaining 2 tablespoons of butter for the apples.
Add the chopped apples, brown sugar, and cinnamon to the skillet.
Cook over medium heat, stirring occasionally, until the apples are tender and caramelized, about 5-8 minutes.
Serve the warm apples topped with the oat and almond mixture.
Notes
Use a heavy-bottomed skillet for even heat distribution. Ensure the apples are cut into uniform pieces so they cook evenly. You can serve this with a scoop of vanilla ice cream or non-dairy whipped topping for extra indulgence.
