Description
Fluffy cinnamon rolls with a vibrant strawberry jam filling and creamy cream cheese frosting. A sweet twist on classic rolls, perfect for breakfast or brunch. Vegetarian and free from pork/lard/alcohol.
Ingredients
2 1/2 cups all-purpose flour
1/2 cup warm milk
1/4 cup sugar
2 teaspoons active dry yeast
1/2 teaspoon salt
1/4 cup milk
1 large egg
1/2 cup softened butter
1 cup fresh strawberries
1/4 cup sugar
1 tablespoon cornstarch
1/2 teaspoon ground cinnamon
4 cups 2-day-old rolls
16 oz cream cheese, softened
1/2 cup softened butter (room temperature)
2 cups powdered sugar
2 tablespoons strawberry puree
1 teaspoon vanilla extract
Instructions
In a bowl, combine 2 1/2 cups flour, 2 teaspoons yeast, 1/2 cup warm milk, 1/4 cup sugar, and 1/2 teaspoon salt. Let stand 10 minutes.
Stir in remaining milk, egg, and 1/2 cup softened butter until smooth. Let rise 1 hour until doubled in size.
Simmer strawberries, 1/4 cup sugar, cornstarch, and cinnamon in a saucepan until thickened (about 5 minutes). Let cool.
Roll out dough, spread with cooled strawberry jam, and roll up tightly. Cut into 12 slices.
Place on baking sheet, second rise 30 minutes. Bake at 350°F (175°C) 15-18 minutes until golden.
For frosting: Beat cream cheese, butter, powdered sugar, strawberry puree, and vanilla until smooth. Spread on cooled rolls.
Notes
Freeze unbaked rolls on baking sheet up to 1 month
Use frozen strawberries (thaw and drain)
Substitute 1/2 tsp vanilla for cinnamon in filling for variation
Store leftovers in airtight container
