A vibrant salad combining peppery arugula, sweet strawberries, creamy avocado, and crumbly goat cheese with toasted nuts. Light and flavorful dressing enhances freshness without alcohol.
Ingredients
4 cups arugula
1 1/2 cups strawberries, hulled and sliced
1 ripe avocado, diced
60g crumbled goat cheese
1/4 cup toasted almonds
2 tablespoons pistachios
Non-alcoholic sparkling vinegar or white vinegar (1 tbsp)
2 tablespoons Dijon mustard
1/3 cup olive oil
1 tablespoon honey
Salt and pepper to taste
Instructions
Prepare arugula by rinsing and drying.
Slice strawberries and dice avocado.
Toast almonds in a pan until golden, add a touch of sugar and stir to caramelize.
In a bowl, mix vinegar, mustard, honey, and olive oil to create vinaigrette.
Combine all ingredients in a large bowl.
Toss gently with vinaigrette before serving.
Notes
Substitute goat cheese with halloumi or feta if preferred
Use other toasted nuts like pecans or walnuts as alternatives
Vinaigrette keeps for 5 days in fridge
Add lemon juice in place of vinegar for a fruitier note
