Ingredients
2 cups graham cracker crumbs
1/2 cup butter, softened
1 cup granulated sugar
4 (8-ounce) packages cream cheese, softened
2 teaspoons vanilla extract
3 cups fresh strawberries or strawberry jam
1 cup whipped cream or Cool Whip
Sprigs of fresh mint for garnish
Instructions
Preheat oven to 350°F (175°C)
Mix graham cracker crumbs and butter until crumbly; press into a greased 9-inch springform pan
Bake crust for 8 minutes; cool completely
In a large bowl, combine cream cheese, sugar, and vanilla until smooth
Fold in half the strawberries (or jam)
Spread half the cheesecake mixture into the cooled crust
Drop spoonfuls of remaining cheesecake over the strawberries
Scoop remaining strawberries on top
Top with whipped cream
Chill for at least 4 hours before serving
