Description

Summer Berry Jello Lasagna is an easy no-bake dessert with a Golden Oreo crust, blueberry cheesecake layer, strawberry Jello layer, and whipped topping.

For the Golden Oreo crust:

  • 36 Golden Oreo cookies
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons red sprinkles, optional
  • 2 tablespoons white sprinkles, optional
  • 2 tablespoons blue sprinkles, optional

For the blueberry cheesecake layer:

  • 6 ounces sweetened berry blue gelatin
  • 2/3 cup boiling water
  • 1/2 cup cold Greek yogurt
  • 1 1/2 cups fresh blueberries
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla
  • 1 3/4 cups whipped cream

For the strawberry Jello layer:

  • 6 ounces strawberry Jello
  • 1 1/4 cups boiling water
  • 3/4 cup iced water
  • 4 cups sliced strawberries

For the topping:

  • 2 cups whipped cream
  • Red, white, and blue sprinkles or star confetti

Instructions

1. Grind the whole Golden Oreo cookies with their filling in a food processor until fine crumbs form.

2. Add the sprinkles and stir with a fork.

3. Add the melted butter and stir with a fork until evenly moistened.

4. Press the crust mixture into the bottom of a 9×13-inch dish.

5. Place the crust in the freezer to firm while preparing the next layer.

6. In a heatproof bowl, combine the berry blue gelatin with boiling water and stir until completely dissolved.

7. Set the gelatin aside to cool.

8. In another bowl, beat the softened cream cheese, powdered sugar, and vanilla until smooth.

9. Add 1 1/2 cups whipped cream and mix to combine.

10. In a food processor, pulse the Greek yogurt and fresh blueberries.

11. Pour the blueberry yogurt mixture into the cooled gelatin and whisk to combine.

12. Add the cream cheese mixture and stir until combined.

13. Spread the blueberry cheesecake layer over the chilled crust.

14. Place in the refrigerator or freezer to set.

15. In a heatproof bowl, combine the strawberry Jello and boiling water, stirring until dissolved.

16. Add the iced water and stir well.

17. Let the strawberry Jello mixture cool completely at room temperature.

18. Arrange the sliced strawberries over the blueberry cheesecake layer.

19. Pour the cooled strawberry Jello over the strawberries.

20. Refrigerate until firmly set, at least 4-6 hours or overnight.

21. Top with whipped cream and garnish with sprinkles, star confetti, or fresh fruit before serving.


Notes

Make sure each gelatin mixture cools before layering so it does not melt the layer underneath.

Chill the crust well before adding the cheesecake layer for cleaner slices.

Refrigerate for at least 4-6 hours, or overnight, until fully set.

Use Cool Whip or homemade whipped cream for the cheesecake layer and topping.
