Description

Experience the ultimate comfort of autumn with this super moist vegan pumpkin bread. Infused with warming spices like cinnamon, ginger, nutmeg, and cloves, this plant-based loaf relies on the natural creaminess of pumpkin puree to achieve a tender, decadent crumb. Studded with vegan chocolate chips for a touch of indulgence, it is a soulful, easy-to-bake treat that brings warmth to any kitchen. Perfect for a cozy morning or as a thoughtful gift, this recipe proves that you don’t need dairy or eggs to create a classic, reliable, and deeply satisfying seasonal centerpiece.

Ingredients

Scale

1 3/4 cups all-purpose flour
1 cup granulated sugar
1/2 cup brown sugar, packed
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 cup pumpkin puree
1/2 cup neutral oil, such as canola or melted coconut oil
1/4 cup unsweetened soy milk or almond milk
1 teaspoon vanilla extract
1/2 cup vegan chocolate chips

Instructions

Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
In a large bowl, whisk together the flour, sugars, baking soda, baking powder, salt, and spices.
In a separate medium bowl, combine the pumpkin puree, oil, non-dairy milk, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
Fold in the vegan chocolate chips.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Store the loaf in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days. You can also freeze slices for up to 2 months. To make it nut-free, ensure your plant-based milk and chocolate chips are certified nut-free.
