Ingredients
2 cups all-purpose flour
1 cup unsalted butter, softened
1 cup granulated sugar
1 tsp baking powder
Pinch of salt
4–5 medium peaches, thinly sliced
3/4 cup packed brown sugar
2 tbsp chopped pecans
1 tbsp ground cinnamon
3 tbsp cornstarch
1 tsp vanilla extract
1/2 cup brown sugar
1/3 cup flour
1 tbsp ground cinnamon
1/4 cup unsalted butter
Instructions
Preheat oven to 350°F
Mix crust ingredients: flour, sugar, baking powder, and salt in a bowl
Cut in butter until crumbly
Pat crust into a greased 13×9-inch baking dish
Squeeze 1 tsp of lemon juice over peaches to prevent browning
Toss peaches with brown sugar, cornstarch, vanilla, and pecans
Spread mixture evenly over the crust
Combine cinnamon, sugar, and flour for the streusel
Cut in butter until crumbly
Sprinkle streusel evenly over the peach filling
Bake 25-30 minutes until golden
Cool completely before slicing into bars
