Ingredients
15.25 ounces yellow cake mix
1/2 cup unsalted butter, melted
2 large eggs, room temperature
8 ounces cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
2 cups fresh strawberries, thinly sliced
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
In a large bowl, combine the yellow cake mix, melted butter, and eggs until a thick dough forms.
Press the dough evenly into the bottom of the prepared baking pan.
Bake for 18-20 minutes or until the edges are lightly golden, then allow to cool completely.
In a mixing bowl, beat the softened cream cheese and sugar until smooth and creamy.
In a separate bowl, whip the heavy cream and vanilla until stiff peaks form.
Fold the whipped cream into the cream cheese mixture until smooth.
Spread the cream mixture evenly over the cooled cookie base.
Top with sliced fresh strawberries before serving.
Notes
Ensure the cream cheese is fully softened at room temperature to avoid lumps in the frosting. For the best results, chill the bars for at least one hour after assembly before slicing to allow the layers to set. Store leftovers in the refrigerator for up to 3 days.
