Description

A refreshing summer salad blending the sweetness of ripe peaches, the crispness of cucumbers, and the tang of juicy tomatoes with a light basil vinaigrette. Perfect for warm-weather gatherings or a light meal.


Ingredients

2 medium ripe peaches
2 cups cherry tomatoes, halved
1 English cucumber, sliced
1/4 cup extra virgin olive oil
2 tablespoons balsamic vinegar
1 teaspoon honey
1 clove garlic, minced
Fresh basil leaves, torn
Salt and pepper to taste
Optional: 1/4 cup crumbled feta cheese (halal-certified, if desired)


Instructions

1. Wash and dry all produce.
2. Slice peaches into 1/2-inch wedges; halve cherry tomatoes.
3. In a bowl, combine olive oil, balsamic vinegar, honey, minced garlic, salt, and pepper to create a dressing.
4. Toss with peaches, tomatoes, and cucumber slices.
5. Gently fold in fresh basil leaves.
6. Let marinate at room temperature for 10 minutes (optional) before serving.
7. Serve chilled or at room temperature.


Notes

For best flavor, use fully ripened peaches and heirloom tomatoes if available.
Omit feta for a vegan version.
Store in an airtight container in the refrigerator for up to 2 days.
