Ingredients
2 large eggs
4 ounces turkey bacon, crumbled
1/4 avocado (approx. 30g), mashed as guacamole
1/2 tsp spiced tomato sauce
1 large croissant, split
1 slice pepper jack cheese
Pinch of salt and pepper
Instructions
Beat eggs in a non-stick pan with a pinch of salt and pepper over low heat, stirring gently to create tender scrambles.
Warm turkey bacon in same pan or toaster until golden and crispy.
Toast croissant lightly.
Layer scrambled eggs and turkey bacon inside.toast. Top with guacamole and spiced tomato sauce.
Place pepper jack cheese on top of filling; close sandwich and toast lightly until cheese melts.
Serve warm with optional honey drizzle if desired.
Notes
Guacamole can be made fresher by adding lime or cilantro.
Use vegan cheese as alternative to pepper jack if avoiding dairy.
Croissant can be substituted with whole-grain muffin for lower-fat option.
