Description

A moist and tender cake that relies on the natural sweetness and moisture of applesauce. This plant-based masterpiece is infused with aromatic spices like cinnamon, nutmeg, and ginger, creating a rustic, heartwarming dessert that satisfies deep cravings. It is a light yet decadent treat that remains incredibly moist for days, perfect for cozy afternoons or sharing with loved ones.

Ingredients

Scale

3 ¼ cups all-purpose flour
1 cup granulated sugar
½ cup packed brown sugar
3 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground ginger
½ teaspoon salt
1 ½ cups unsweetened applesauce
¾ cup vegetable oil
1 teaspoon vanilla extract

Instructions

Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
In a separate bowl, combine the applesauce, vegetable oil, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
Pour the batter into the prepared baking pan and smooth the top with a spatula.
Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool completely in the pan on a wire rack before slicing.

Notes

Store the cake in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days. For added texture, you can fold in a ½ cup of chopped walnuts or raisins before baking.
